Black chana chat








You get this chat on the streets of mumbai, its all time favourite.

Ingredients:--------

Soaked chana:----------2cups( soaked and boiled)
potatoes:--------------1 cup.(boiled )
onion and tomato:------------------1cup(finely chopped)
orange juice:----------------2tbsp.
lemon juice:-----------------2tbsp.
coriander:----------------------1/2 cup.
red/green chilli:--------------1tbsp. (finely chopped).
oil:-------------------------1tbsp.
black salt as per taste.
papad (optional)
method:-----------------
Its very simple mix everything in a big bowl and serve with papad.

Mumbai veg sandwich




Mumbai grilled sandwich, is all abt the nice thing's this sandwich you wont get it in hotel's it will get just on the streets... and its yumm, but for this you need hand grill:)

Ingredents:-------------


  • Sandwich bread:----------------8slice.
  • onion:---------------------- 2(finely sliced)
  • tomato's:---------------------2(finely sliced)
  • capsicum:---------------------2(finely sliced)
  • beetroot:----------------------2(finely sliced)
  • butter:--------------------------100gm.

  • for potato sabji:---------------

  • potato's:---------------------3-4(boiled and mashed)
  • grated ginger n garlic:------------2tbsp.
  • turmeric:----------------1/2tsp.
  • green chilli:-----------------2tsp.(finely chopped)
  • jeera powder:-------------2tsp.
  • chaat msala:-----------------2tsp.
  • black salt to taste.
  • oil :-----------------1tsp.

  • Method:---------------

  • For potato sabji:------------
  • In a kadai add oil, then add ginger garlic, chilli, everything from the ingredient of sabji except chaat masala, and salt.
  • satue for 5-6mins, in low flame, then add salt and chaat masala. keep aside to cool.
  • after the potato get cool, mashes it properly.

  • Method:--------

  • On the bread add butter and layer of below veggies, and add mashed potato.
  • sprinkle some black salt and cover it with another bread slice.
  • Put it in hand grill, by applying the hand grill some butter.
  • put it in low flame turn it after 3-4 mins and the same for another side.
  • serve hot.

Kothimbir vadi





Kothimbir vadi is a crispy fritter made from coriander leaves and chickpea flour. It's a favourite Maharashtrian snack which is served as a  tea time snacks.


Main Ingredients:---------------------------


2 cups of coriander leaves, washed and chopped


3-4 tablespoon gram flour


1/2 tablespoon rice flour


2 teaspoon red chili powder


1 teaspoon turmeric powder


1 teaspoon cumin powder


2 teaspoon tamarind paste


1 teaspoon oil


1 teaspoon jaggery


salt to taste


Ingredients for Seasoning:------------------------

2 teaspoon oil
2 teaspoon white sesame seeds
1 teaspoon mustard seeds
1/2 teaspoon cumin seeds
1/4 teaspoon asafoetida
4 to 5 few curry leaves
1 green chilli chopped


Method:------------------------------------


Combine all the main ingredients together in a bowl and knead to make a firm, smooth dough. Add little water if required and shape it into a cylindrical roll.

Prepare the steamer with water. Grease a dish of steamer and place the rolls in the steamer plate. Steam the rolls in the steamer for about 15-20 minutes on high heat.

Once steamed, allow it to rest for about a minute and take it out and cool completely. Once cooled completely, cut the rolls into 15 equal slices or bite size pieces.

Heat oil in a pan; add mustard and cumin seeds and allow them to crackle. Add in the asafoetida, the curry leaves, green chilies and sesame seeds. Stir well for about 30 seconds.

Add in the steamed rolls into the seasoning and stir fry for about a minute. This is so that the rolls gte well coated with the seasoning. Serve warm with hot tea or just as it is for snack.

Charcoly Grilled prawns.

Ingredients:----

20-25 pieces:--------- Large Prawns(with tail).
6-7 :----------- Peeled n grated Garlic.
1" :----------- Grated ginger.
1 :----------- lemon juice.
1 :----------- lemon zest.
3 tbsp :----------- Pasta n pizza sauce(tomato base)
3 tsp :----------- chilli powder(as per your taste)
2 pinch:----------- Turmeric.
1 tsp :----------- Ghee.
7-8 :----------- Curry leaves(finely chopped)
1 bowl :----------- Coriander (finely chopped)
2pinch :----------- Fish fry Masala(optional)
2 tsp :----------- Olive oil.
Salt to taste.
1 piece of Charcoal.
12-15 Wooden Skewers.(depend on the size of prawns)

how to make:---

1. Clean prawns(with tail).
2. Keep Ur charcoal on gas till it became red.
3. Till the charcoal get heated,in a large bowl, add prawns and granted garlic, ginger,lemon juice n zest, pasta sauce,chilli powder,turmeric, chopped Curry leaves n coriander,masala n olive oil, n salt, mix it well.
4. Put a small bowl in between the marinated prawns,in Small bowl keep the hot charcoal n put ghee, n cover it suddenly,so the smoke wont come out, remove it after 10mins.
5. Mix every thing,and lid it and keep in freeze for 4-5hrs.
6. Remove from freeze n keep aside for another 1hr.
7. Oil your skewers and plug the prawns in it.
8. Plug it like in u shape.
9. In a pan add oil n grill it for 10-15mins for both the side.
10. After the prawns are done just fry them on the flame for 1min.

Tip :--1. Soak your wooden skewers in water for 15mins before you use, so it wont burn.

2. Always remove the middle tread of prawns.
3. You can add sesame seed, for a nutty flavor.
