Basa Fish Curry.









Its a very yummy, instant fish curry and it taste very nice with steam rice and fried papad.

Ingredients:-------------------


  • Basa Fish:--------------- 500gm (boneless and fresh) (cut into medium pieces)
  • Tomato purée:---------- 4 tbsp.
  • Onion :------------------ 2 (roughly chopped)
  • Onion:------------------- 1 (finely chopped)
  • Tomato :---------------- 2 (roughly chopped)
  • Ginger n Garlic paste:------- 3tsp.
  • Tamarind:-------------- 1tbsp (soak in warm water)
  • Chilli powder:--------- 2tbsp.
  • Mustard seeds:--------- 1tsp.
  • Turmeric:--------------- 1tsp.
  • Fish masals:------------ 1tbsp.
  • Coriander:-------------- 2tbsp ( finely chopped)
  • Mustard oil:------------- 4tbsp.
  • Salt to taste.

Method:-------------------------


  • Wash the fish and rub with some salt and turmeric, keep aside.
  • In a microwave base bowl add roughly chopped onion, tomato, ginger garlic paste, tamarind, chilli powder, fish masala(1tsp) add oil 1tbsp, and microwave it for 4-5mins. (or till onion gets soft)
  • After 5mins grind it till you get's a fine paste.
  • In a non-stick pan add 2tbsp oil, as the oil heated add fish after 2mins, turn it for another 2mins.(or till it gets cook)
  • In a kadai/pot add remaining oil, after 1min add mustard seeds as they started popping.
  • Add the onion, tomato mixture stir it for 3mins then add tomato purée.
  • When the mixture start separating oil add water and boil it for 9-10mins on medium flame.
  • Then add the basa fish , fish masala and salt .
  • Cover it for another 5mins on low flame.
  • Garnish it with coriander, serve with steam rice and fried papad.

Chili Sabudana Vada















Today is MahaShivaratri, which celebrates in honour of Lord Shiva . So, today there is fasting food in my kitchen, a crunchy hot Sabudana Vada, also called "sago vada", is a traditional deep fried snacks from Maharashtra . which often served with curd/chutney and masala chai.

Ingredients:---------------


  1. Sabudana:-------- 250gm ( washed and soaked overnight with little water)
  2. Peanuts:---------- 1 cup ( roasted and grated )
  3. Potatoes:------- -- 3-4 medium (boiled and mashed)
  4. Coriander:-------- 1/2 cup 
  5. Cumin seeds:----- 1tbsp (roasted)
  6. green chilli's:------- 6-7 (depends on you taste)
  7. 1/2 lemon.
  8. soda 2 pinch.
  9. salt to taste.
  10. oil to fry.

Method:------------------


  1. In a big bowl add soaked sabudana, and mash it.
  2. Then add potatoes and grated peanuts. mix it roughly.
  3. Make a paste of coriander, cumin, green chilli (don't add water)
  4. Mix the mixture in sabudana bowl and mash it properly by adding salt and soda.
  5. When you want to make vada, squeeze lemon and make a small patty.
  6. Fry in medium flame of oil. Fry it till it changes colour.

Tips:---------------------


  1.  Basically sabudana should soak atleast 6-7hrs, but if you want it within 2-3 hrs, then soak them in warm water.
  2.  If you want to make vada's for kids don't put chilli, rest will be the same.
  3.  You can add 2tbsp rice flour (will be not for fasting)
  4.  Be careful, when your frying the vada's sometime they pop's in oil.
  5.  While making a patty put some oil in your palm.

Til Gud Ladoo






Til Ladoo is specially sweet for Makar Sankranti. this dessert is specially popular during winter months as sesame thought to have heating properties, but anyway i don't mind to eat this crunchy ladoo anytime.
Ingredients:-------------
2 cup:-------------- roasted sesame (use polish one)
1 cup:-------------- roasted peanuts(uncover it and chop into 2-3 pieces)
1/4 cup:------------ roasted dry coconut(sliced finely)
1cup:--------------- jaggery (chikki gud)
1tbsp:-------------- ghee
1tsp:--------------- home-made cardamom powder.
Method:-------------------------
In a bowl add everything except jaggery, ghee and cardamom powder.
In a thick bottom pan add jaggery and ghee. put them on low flame.
As the jaggery starts dissolving, (you should not overheat the gud) after sometime you will see the bubbles in the mixture.
(you can check the perfect mix of jaggery by dipping a spoon in the pan and make the spoon slightly up if you see the thread that means the mixture is ready)
Urgently put it down from the flame and add the rest of ingredients.
Mix it very well, and grease the plate.
Put some ghee on your palm and make a round balls (you have to do the ladoo, when the mixture is hot/warm)
If you feel the mixture is cool, then again put the mixture on low flame till it gets warm
repeat the process.
You will get approx 25-27 ladoo's.

Fruity Muffins with Blackcurrants






Here some time you have lots of fruits in your home and just wondering what to do with it, here is a very simple recipe of muffin with fuits..

Ingredients:----------------

3 cups all-purpose flour (maida)
3/4 cup granulated sugar
1 tbsp baking powder
3/4 tsp salt
1-1/2 cups milk
1/3 cup melted butter
3 cups fresh fruit, such as coarsely chopped apples and pears, strawberry, black currants

Method:-------------------- 

Preheat oven to 375F (190C).
Lightly grease muffin tin.
Measure flour, sugar, baking powder and salt into a large bowl.
Stir with a fork. Stir in milk, then butter.
Fold in fruit and spoon mixture into muffin tins.
Bake in centre of 375F (190C) oven until a cake tester inserted into centre of muffin comes out fairly clean and muffins are golden brown, from 20 to 25 minutes.

Kashmiri Methi Dum Aloo







Here is kashmiri dum aloo , with some methi and roasted onion, its a creamy sauce of curd and some cashew paste. Try it with garam phulkas..


Ingredients:------------

Small aloo:---------15-18 (cooked and peel the skin off)
tomato:------------3-4 medium(should be red) roughly cut.
onion:-------------2-3 medium. roughly cut
fried onion:----------2 medium.
cashew :-------------1/2 cup
curd:----------------1cup.( nice smooth paste)
ginger garlic :---------------1 1/2 tsp (freshly made)
methi:-------------------1/2 cup.
garam masala:-----------------1 1/2tsp.
whole cardamom:--------------4-5
turmeric:-------------1/2tsp.
red chilli powder:-------------2tsp.
cumin seeds:------------------1sp.
kasri methi:----------------1/2tsp.
methi for garnish.
oil :---------------7 tsp.
water:-----------------2cup
salt to taste.

Method:--------------------

In a bowl add 2tsp of curd and water mix it and add cashew and keep aside for 30mins.
Peel off cooked baby potatoes, and poked them with fork 2-3times.
In a microwave safe big bowl add roughly chopped onion, tomato, ginger, garlic, oil 2tsp, turmeric,garam masal 1/2 tsp, red chilli powder 2tsp, cumin seeds.
Mix all together, and cover it with lid.
Microwave it for 2mins remove, mix and again keep it for 3mins.(or till onion and tomato becomes soft)
Remove it from microwave and keep it aside (don't remove the lid) keep it till it gets cool.
After it gets cook remove it from microwave bowl and grind it till a fine paste(no need to add water)
Make a paste of cashew by adding a little amt of curd water.
In a big kadai add oil then add methi, as it gets soft remove methi and add baby aloo.
Stir it, till it gets crispy.
Remove the aloo and add cardamom and add paste of tomato and onion.
Stir it, till it release oil, add 1tbsp. of water( it will help the mixture to release the oil)
After2-3 mins make the flame slow add the fried aloo and methi add curd and cashew paste.
Stir it nicely and add water as it gets boil add garam masala, salt and fried onion's.
Garnish with methi leaves. Serve with garam phulkas.

Passion fruit and coconut lassi






 Passion fruit always go with mango, but because of the off season, here i make  passion fruit and coconut lassi and it taste nice try it:)

Ingredients:------------------

Passion fruit :--------2.
coconut water:---------1/2cup.
packed curd:-------------1cup.
banana:-----------1( small banana)
sugar:--------1tsp( as much sweet you want)
honey:------------1tsp.
pinch of cinnamon powder
ice cubes (optional)
pinch of salt (optional).

Method:--------------

. In a mixy mix every thing without salt.
. Pour it in, the glass you serve add salt(if you want).
. serve chilled.

Walnut-Raisin Chocolate Cake










Ingredients:-------------


1 cup chopped walnuts
1 cup raisins
1 cup miniature marshmallows
1 package chocolate cake mix (regular size)
4 eggs
1 cup mayonnaise
1 cup water

For Frosting:---------------------------------

Instant whipped cream. (i used blue bird)

For decoration flowers and sugar balls.

Directions:-------------------------------

. In a small bowl, combine the walnuts, raisins and marshmallows; set aside. In a large bowl, combine cake mix, eggs, mayonnaise and water. Beat on low speed for 30 seconds. Beat on medium for 2 minutes. Stir in nut mixture.
. Pour into a greased and floured 10-in. fluted tube pan. Bake at 350° for 45-50 minutes or until a toothpick inserted near the center comes out clean. Cool for 10 minutes before removing from pan to a wire rack to cool completely.
. Cut th cake in between add whipped cream ( use whipped cream as per the instruction)
. Put the another half on it and decorate it with cream.
. Use spoon backside for getting the picture look.

          Eggless tomato omelette




          Eggless Omelette sounds so weird, but not the taste its a very instant snacks item.
          Ingredients:------------
          besan:------1 cup.
          tomato:-------------1/2 cup chopped( need juicy red tomato's)
          onion:--------------2tbsp.
          garlic:--------------1tbsp finely chopped.
          ginger:-------------1tbsp.
          lemon juice:-----------1 1/2tbsp.
          turmeric:---------------1tsp.
          green chilli's:------------2tbsp (finely chopped)
          ajwain:------------------1/2tsp.
          jeera powder:------------1tsp.
          chat masala:--------------1tsp.
          pineapple juice:-----------2tsp.(optional)
          salt to taste.
          butter or oil  to fry.
          water to make a batter.
          Method:------------
          Mix everything except oil and water, mash it properly, so the tomato release the water.
          then add water and make a batter (consistency like a pancake).
          put the batter on a hot greased with butter tawa.
          add a oil and turn them after2-3 mins.(turn them gently)
          press it, to make it cook nicely then after 3-4 mins again turn them, till you get a nice crispy omelette.
          put some butter when its hot and serve.
